Fried Rice  
   
 
   
Ingredients:  

4 bowls cooked rice
1 tablespoon oil
2 eggs
½ cup green peas or mixed peas
1 pinch salt

1 pinch sugar
¼ teaspoon dark soy sauce
½ teaspoon soy sauce
¼ cup chopped BBQ pork

   

Directions:
1. If using frozen green peas or mixed peas, boil them in water for 2 minutes and drain. Set aside.
2. Heat oil in a large saucepan or wok in medium heat.
3. Add 2 eggs and scramble until slightly cooked
4. Add cooked rice, green peas and BBQ pork. Stir fry for 2-3 minutes until ingredients are thoroughly mixed.
5. Stir in salt, sugar, soy sauce, and dark soy sauce. Cook for a few more minutes. Serve hot.

Rice Preparation:
For those of you who do not have a rice cooker, here are some helpful tips on preparing your rice.

1. To make 4 bowls of steamed rice, you need roughly 1 cup of uncooked white rice.
2. Rinse rice, drain. Put rice and 1 ½ to 2 cups of cold water into a pan, cover
3. Put it over high heat. Once boiled, reduce heat to low and let it simmer.
4. Simmer rice in water for about 12-20 minutes until all water is absorbed. Remove from heat. Do not open lid at this stage.
5. Let pot stand for 10-15 minutes.
6. Stir well and ready to serve
7. (Optional) Let rice to cool before using it on fried rice.

Note: The amount of water may vary depending on the types of rice and how “old” the rice is.

Variations:
This dish can be changed in many ways according to personal preference. The recipe here is the most typical and basic one. Here are some suggestions:

  • You may replace BBQ pork with minced beef, shredded chicken, tofu, or prawns.
  • You may also add vegetables such as celery, green beans, onions, sweet peppers, etc.
  • Replace white rice and eggs with brown rice and free range eggs for a healthier dish.
