1 lb Unshelled
Prawns (fresh or frozen)
¼ cup Cornstarch
2 cup Oil |
1 Tablespoon Oil
1 teaspoon Garlic, minced
2 Hot chili peppers, sliced (red or green)
1 pinch Salt

Directions:
1. Thaw prawns if using frozen.
2. In a saucepan or wok, heat oil over high heat. Use 2 cups
or enough to cover prawns.
3. Combine cornstarch and prawns to coat. Transfer to a large
sifter to sift away excess cornstarch.
4. Fry prawns in pre-heated oil over high heat. Deep fry for
2 minutes for until colour is orange or red. Drain, set aside.
5. Heat 1 Tablespoon oil in a skillet or a wok, add minced
garlic and sliced hot chili, cook for 1 minute
6. Add fried prawns, stir well, add salt to taste.
Suggestions:
You must use very hot oil to fry prawns, otherwise they will
not be crunchy.
Prawns will be done very quickly in hot oil, so watch out.
Also, keep moving the prawns to prevent them from sticking
together.
